How it all started

Thai cooking is fun! It’s all about practice and experimentation catering to your own personal tastes.

The idea of teaching Thai cooking classes in Austin started with inviting friends over for dinner. From cooking for one person to two to ten and more, words spread that dinner at my place was always a feast. Their smiling faces and praise made me feel like I could fly.

I then started going over to friends’ houses to cook in their kitchens. From one kitchen to another, I used available utensils and ingredients to whip up dinners and midnight feasts after a night downtown.

One day, a friend asked if I taught Thai cooking class- “I want to learn how to cook Thai food like you do”. I thought that was a great idea. As a real home cook, I imagined small and personal classes- classes that would allow me to talk to everybody and teach them how to prepare their favorite Thai dishes. Now you can enjoy Thai cooking lessons that will allow you to have fun, at your own homes.

My life story in cooking

Techniques and ingredients vary from family to family. In our family cooking was considered an art. I’ve watched my grandma cook since I was 5 while growing up in our kitchen in Nonthaburi, I was taught the art of real home cooking following my family’s tradition of cooking excellence. My knowledge comes from my grandmother, my mom and my dad. As you can see everyone in the family cooked and cooked well!

When I was growing up I remember being told about how people in the past would choose a bride just by listening to how she prepared her curry paste! “The sound of the pestle hitting the mortar has to be consistent and intense…” that what my grandmother used to say. So I learned the secrets of fine Thai cooking from scratch- charcoal fires, mortars and pestles, hand-made pastes…

But don’t worry, a gas stove, grinder, and ready-made pastes will do just fine!
To me, Thai cooking is about rhythm. From ingredients that are already in your fridge in your kitchen…your local market, I can help you create a full-blown meal. I can help you buy the right sauces and best pastes from the local markets. I can design my classes to cater to your specific interests, your palate and dietary requirements, and your depth of interest in cooking and Thai food.

 

 



My real name is Nithiwadee Sanitchat. Jam is my nickname but also the name everyone knows me by, and it’s much easier to pronounce for non-Thais. I grew up in Thailand and came to Austin in 2001 as a graduate student at UT. Teaching home cooking is a great way for me to bring my love for Thai food and the people around me all together!
